Chill foods to proper holding temperatures quickly and safely with this Traulsen Specification Line RBC10036 remote 100 lb. capacity reach in blast chiller with 6 legs This unit moves food through the temperature danger zone within 90 minutes to limit bacteria growth that can cause foodborne illness, making it an essential part of any HACCP plan. Its interior features 5 sets of universal tray slides, and each slide accommodates (1) 18 x 26 sheet pan or (2) 12 x 20 x 2 1/2 food pans. For added convenience, the door is selfclosing, and includes a stayopen feature when opened past 120 degrees. The Traulsen RBC10036 comes with easytouse SmartChill microprocessor controls, which give you access to 3 chilling functions blast chill for quickly cooling foods, soft chill for delicate products like seafood and produce, and freeze for holding at temperatures as low as 0 degrees Fahrenheit. The unit also switches to the holding cycle automatically after completing a blast chill cycle, making the entire chilling process easier to manage. Additionally, the controls aid in HACCP documentation by letting you record and print all required product chill cycle information on adhesive labels. High density, foamedinplace insulation ensures outstanding temperature preservation and efficiency. The Traulsen RBC10036 is UL Listed, requires a 208230/115V electrical connection, and must be hard wired it does not come with a cord and plug. For proper removal of condensation, it also requires connection to a floor drain.
