Getting the right grindSome people say the single most important way to improve the quality of coffee is to buy whole beans and grind them just before you brew. Not only do whole beans keep better ten days at room temperature in an opaque, airtight container but they lose aromatics much more slowly than do ground beans. Grinding beans breaks open thousands of cells, which release aromatics into the air and take in oxygen and moisture. Air and moisture are the enemies of freshness. First the beans fade to lifelessness, then they start going bad; air oxidizes them, making them taste rancid. For regular forms of brewing, the right grind makes all the difference to a good cup. The shorter the brewing time, the finer the grind must be. Espresso, which has a brewing time of half a minute or less, requires a very fine grind. The longer the brewing time, the coarser the grind should be. The best way to know whether you're using the right grind is to go to a specialty coffee shop and ask for a sample. To gauge the feel and look, rub it between your fingers, put some ground coffee on a white surface and poke it around. Powder, or fines, will stay on your fingers; grit will fall off.
